  • 1 lb. elbow or similar share pasta
  • 2 Tbsp. flour
  • 2 Tbsp. butter (grass-fed, if possible)
  • 1 1/2 cups milk (organic, if possible)
  • 1 1/2 cups of shredded cheddar or your favorite blend of cheese (yep, organic, if possible)

notes

Buying cheese by the block and shredding it yourself can mean a cleaner product – no starch to prevent caking – and helps it go a lot farther on a budget. Plus, less food surface area to absorb microplastics.

instructions

1. First, cook the macaroni according to the package instructions for al dente or firm pasta.

2. Second, while the macaroni is cooking, melt 2 Tbsp. butter in a saucepan.

3. Next, stir in 2 Tbsp. of flour.

4. Then add 1 1/2 cups of milk, cooking over medium heat while stirring frequently.

5. Next, toss in the cheese of your choice and salt and pepper to taste.

6. When it is bubbly, it should also start to thicken. Remove from heat.

7. Let sit for a minute or two then pour over noodles.

8. Last step, enjoy the comfort food!
