- 2 chicken breasts
- 1 pound of frozen corn
- 1 pound of cooked black beans (or canned)
- 1 16 oz. jar of salsa
- 1 8 oz. cream cheese
- 8 oz. tortilla chips
- 1 cup shredded cheese
optional garnish
- Avocado
- Fresh cilantro
instructions
- In the morning, place the 1st four ingredients into the crockpot in the order listed above.
- Cook on high for 4-6 hours.
- When you are almost ready to eat, turn off the crockpot and use two forks or knives to quickly shred the chicken.
- Add 1 8 oz. package of cream cheese and stir.
Serve as is or with avocado and fresh cilantro.
