Slow cookers save you time, are portable, and let you cook a lot of food at once without having a bunch of pots to scrub. If you think that sounds good, just wait till you experience the flavor and simplicity of this quick, crowd-pleasing meal.

Cook time: 4 to 6 hours
Total time: 4 hours, 15 minutes minimum
Yield: serves 4-5


  • crockpot


  • 2 chicken breasts
  • 1 pound of frozen corn
  • 1 pound of cooked black beans (or canned)
  • 1 16 oz. jar of salsa
  • 1 8 oz. cream cheese
  • 8 oz. tortilla chips
  • 1 cup shredded cheese

optional garnish

  • Avocado
  • Fresh cilantro


  1. In the morning, place the 1st four ingredients into the crockpot in the order listed above.
  2. Cook on high for 4-6 hours.
  3. When you are almost ready to eat, turn off the crockpot and use two forks or knives to quickly shred the chicken.
  4. Add 1 8 oz. package of cream cheese and stir. 

Serve as is or with avocado and fresh cilantro.
