This Fourth of July, we wanted to go pretty, healthy, and yummy for our snacks. 

We concocted the simplest sweet treat that met all these criteria. 

There are so many popsicle molds out there. We have tried many, and may I suggest you choose the individual molds rather than the ones that come in a big clump. Also, get the ones with the drip-proof handles. WORTH IT!  My kids like the narrower type, like rockets and stars. 

Ingredients

  • Blueberries (fresh or frozen) We used fresh.
  • Strawberries (fresh cut up) Raspberries would work too.
  • 1 Can Coconut Milk
  • 1 Can Condensed Sweetened Coconut milk

Fill your popsicle molds with the fruit.

Here are some adorable options that we enjoy.

Blend the can of coconut milk and the can of condensed sweetened coconut milk in a blender. Pour mix over the berries, insert the sticks, and freeze! It’s that easy.

We use this sweetened condensed coconut milk. It’s a little spendy but worth it. Also, it is tricky to find in stores, so I like to just order a case and have it in my cupboard when we get the urge to make vegan popsicles or my daughter-in-law’s favorite: Vegan Pina Coladas!


We also made Peaches and Cream today: 

Blended peaches with coconut milk and honey. Pour into molds half full. 

Mix another can of coconut milk with the sweetened condensed coconut milk and pour on top of peach mix. Freeze. So yummy! 


I ate 3 of these yesterday and weighed a pound less this morning. Maybe I’m onto my newest weight-loss kick! HAHAH.
